Kyubey is considered by many to be the sushi restaurant in Japan, and yes, the fish is amazing. But that is not the main reason for its fame.
Perhaps the tamagoyaki sweet egg omelet is more telling. The multi-layered egg patty requires great skill, ample preparation and lots of cooking time, and Kyubey's version melts in your mouth like custard.
The unusual dishes like the slices of daikon (radish), shiso (perilla) leaf and plum sauce should not be ignored.
We recommend sitting at the counter at Kyubey, so you can watch the master chef in action and throw him questions once in a while about his craft.
