Whether sweet, dry, cloudy, sparkling, fruity, aged or mellow, they've got something to placate your current tastes and something to push your horizons.
As a good starting point, try the three glass set 'from the Tokyo suburbs,' and if you’re brave, accompany it with whale’s cartilage pickled in sake cake. (There is an extensive list of seafood guts to go with the nihonshu.)
