Competition held to find Singapore's next iconic dish

Top restaurants in Singapore dispatched their ace teams with a mission: Whip up and create Singapore's next iconic dish.

Organized by the Restaurant Association of Singapore (RAS) to promote local chefs and inspire creativity, the competition involves tackling five dishes -- a starter, soup, meat, seafood and dessert. The teams have just 56 minutes to prepare each dish according to Channel NewsAsia.

But what makes a dish uniquely Singaporean? "You have to come out with dishes that comply with the four races that we have in Singapore," said one chef, referring to Singapore's Chinese, Malay, Indian and Eurasian mix.

"We look for sweet, sour and spicy," said another. "It must have local ingredients like garlic, onion, chilli." The winning entries will be served at RAS's Industry Night at the end of the month.
