Such is the case with the award-winning Majestic Restaurant -– at the New Majestic Hotel in Bukit Pasoh -- by chef Yong Bing Ngen.

A humble bean curd arrived fried to perfection then crowned with a hunk of abalone-like braised bai ling mushroom lounging in a profound black truffle-infused gravy; while Yong’s rendition of cote de boeuf reveals themselves as thin slices of rib-eye steak flawlessly pan-seared until fork-tender, then coated with a divine mustardy sesame sauce.

If you do not already know, Yong’s pedigreed background included stints at top notch Chinese dining institutions including Jade and Jiang Nan Chun; he is thus equally adept at modern Chinese creations as he is with classic Cantonese; the starter of crisp Peking duck skin draped over a crusty pan-fried foie gras was prove enough.
