Of late, if you’ve visited Brasserie Les Saveurs at St Regis Singapore, you might have noticed the new French-accented a la carte menu that was recently introduced in place of buffets.

It is not just any menu, but one embraced in an elegant A3-size, jet-black jacket bearing the classic French touches of executive chef Frederic Colin and chef-de-cuisine Jean-Marie Merret.

Our plaudit goes to culinary duo for the impressive ensemble of French gastronomic heart throbs; standouts of which included an ambrosia of foie gras terrine served with a dollop of duck rillette and sides of mango chutney and cornichons; just-cooked lobster chunks basking in a rich and flavorful bisque topped with crouton crisps; and pan-roasted duck tournedos with West African Penja pepper. Pair these with one of over 1,000 wine vintages from the cellar; when in doubt, defer to the recommendations of Sommelier Manual Rodrigues.

And a meal here will not burn a hole in your pocket. Mains selections from the newly minted menu are available from just $31 for a hand cut beef tartare to $48 for a roasted lamb saddle.
