Double-boiled conch soup pairs best with Mumm at Nanhai No. 1

This dinner proves Champagne can truly go with anything

Nanhai No. 1 Champagne dinner
King prawn in bang sauce with fried mantou and a glass of Mumm's Cordon Rouge.
G. H. Mumm and Nanhai No. 1 are collaborating on a menu until July 31. Diners get a showcase of the Michelin-starred Nanhai No. 1's best contemporary takes on Chinese classics as well as an experience of Mumm's range of premium tipples.

On the special menu are Chinese delicacies such as iced conch with double-boiled conch soup espresso paired with G. H. Mumm Cordon Rouge. An unlikely marriage of a hot soup with a cold Champagne, this duo isn't for the culinarily uninitiated.

Then follows the restaurant's signature king prawn in bang sauce served with fried man tou, also matched to the Cordon Rouge, while a Cantonese-inspired steamed garoupa with bean curd and XO chili sauce is paired with G.H. Mumm Millésimé 2002.

The special eight-course Champagne-pairing menu will be available at Nanhai No. 1 until 31 July for $1,380 per set. Apart from the first two dishes on the menu, each course can be ordered individually at a set price.
