Khao soi deconstructed
Khao soi is hands down one of the tastiest Thai dishes ever. But if it isn’t done right, it’s incredibly disappointing.
Most people associate it with northern Thailand -- Chiang Mai, in particular -- but khao soi isn't local at all. The “Wall Street Journal” just published an in-depth article on the history of this “fusionist creation" that was actually " abetted by migration and entrepreneurial ingenuity.”
Well that’s a fancy way to describe a bowl of yellow noodles in a coconut milk-based red curry soup with meat. But nevertheless we’re always pleased to see an article devoted to the art of khao soi. It lists a few great Chiang Mai restaurants serving the dish as well.
Unfortunately, it’s hard to find a quality bowl of khao soi in Bangkok. Some say tech mecca Pantip Plaza’s food court does a great khao soi, including blog Absolutely Bangkok. And speaking of blogs, there’s one that's solely dedicated to finding the perfect bowl of khao soi in New York City, though they only list one Bangkok restaurant serving the dish: Thai chain S&P.
